The one recipe that turns sad, overripe bananas into something transcendent. Moist, tender, and warmly spiced with cinnamon and vanilla. A handful of chocolate chips pushes it from great to absolutely irresistible. Perfect with morning coffee.
Preheat oven to 350F. Butter a 9x5 inch loaf pan.
Mash bananas in a large bowl until mostly smooth. Stir in melted butter.
Mix in sugar, beaten egg, and vanilla.
Stir in baking soda, salt, and cinnamon. Fold in flour until just combined. Do not overmix.
Fold in chocolate chips. Pour batter into prepared pan.
Bake for 55-65 minutes until a toothpick comes out clean and the top is golden brown.
Cool in pan for 10 minutes, then turn out onto a wire rack.
