Heat the vegetable oil in a pan over medium heat.
Fry the sliced onion until golden brown.
Add the cooked tonkatsu to the center of the pan.
In a separate bowl, mix the vegetable stock, soy sauce, mirin, and sugar.
Pour three-quarters of the sauce mixture around the tonkatsu.
Sizzle for a couple of minutes until the sauce thickens slightly and the tonkatsu reheats.
Pour the beaten eggs around the tonkatsu.
Cook for 2-3 minutes until the eggs are cooked through but still a little runny.
Divide the cooked sushi rice between four bowls.
Top each bowl with half of the egg and tonkatsu mixture.
Sprinkle with chopped chives and serve immediately.
Drizzle with additional soy sauce for extra flavor, if desired.
