These fluffy pancakes are a delightful breakfast treat that will brighten your morning! Perfect for family brunches or a cozy solo meal, they’re quick to whip up and can be customized with your favorite toppings.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and kosher salt until well combined.
In a separate bowl, mix the milk, egg, canola oil, and vanilla extract until fully blended.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay!
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter.
Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown on the other side.
Remove the pancakes from the skillet and keep warm while you repeat with the remaining batter.
