Dry-fry the pine nuts or almonds in a large pan until lightly toasted, then transfer them to a plate.
Add the olive oil to the pan.
Fry the chopped onion and cinnamon together until the onion starts to turn golden.
Increase the heat and stir in the lamb.
Fry the lamb until it changes color.
Add the basmati rice and cook for 1 minute, stirring constantly.
Pour in 500 ml of boiling water.
Crumble in the lamb stock cube and add the dried apricots.
Season to taste.
Reduce the heat, cover, and simmer for 12 minutes until the rice is tender and the stock has been absorbed.
Toss in the toasted pine nuts and chopped mint before serving.
