Indulge in the rich and aromatic flavors of Lamb Rogan Josh, a classic Indian curry that will transport your taste buds to the streets of India. This dish features tender lamb simmered in a fragrant blend of spices, perfect for serving over basmati or pilau rice.
Put the onions in a food processor and blend until very finely chopped.
Heat the sunflower oil in a large heavy-based pan.
Fry the chopped onions with the lid on, stirring occasionally, until golden and soft.
Add the garlic and ginger to the pan and fry for an additional 5 minutes.
Add the Madras paste, paprika, cinnamon stick, cardamom pods, cloves, bay leaves, and tomato purée to the pan.
Stir well over the heat for about 30 seconds.
Add the cubed lamb and 300 ml of water to the pan.
Stir to combine, then reduce the heat and add the Greek yogurt.
Cover the pan and gently simmer for 40-60 minutes until the lamb is tender and the sauce is thick.
Serve the Lamb Rogan Josh garnished with chopped coriander, alongside plain basmati or pilau rice.
