Indulge in this creamy and slightly spicy Penne Alla Vodka, perfect for a cozy dinner with friends or a special date night. The rich flavors of tomato and vodka come together beautifully, making this dish a delightful crowd-pleaser.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the sliced garlic, sea salt, black pepper, and red pepper flakes. Cook for an additional 1-2 minutes until the garlic is fragrant but not browned.
Add the tomato paste and cook for another 2-3 minutes, stirring frequently to deepen the flavor.
Pour in the vodka, scraping the bottom of the pot to deglaze it. Let it simmer for about 2 minutes to allow the alcohol to cook off.
Stir in the crushed whole peeled tomatoes and bring the sauce to a simmer. Reduce the heat to low and let it cook for 10 minutes, stirring occasionally.
While the sauce simmers, bring a large pot of salted water to a boil and cook the penne according to package instructions until al dente, usually about 11-12 minutes.
Once the pasta is cooked, reserve about 1 cup of pasta water, then drain the pasta and add it to the sauce.
Stir in the heavy cream, adjusting the sauce's consistency with reserved pasta water as needed. Mix until the pasta is well coated, then remove from heat.
Serve hot, garnished with fresh parsley or basil, and generously topped with grated Parmesan cheese.
